Your Frying Pan Could Matter More Than You Think: 8 Cookware Materials Ranked

Your kitchen may be full of healthy foods—but what if the pan you cook them in deserves a closer look?

Cookware materials vary considerably in durability, performance, and potential chemical exposure. And when you're trying to optimize health after 50, it's worth knowing what's actually sitting between your food and the pan.

Here are eight common stovetop materials, ranked from least appealing to most.

8. Traditional Nonstick (PTFE) — 1/10

Traditional nonstick coatings, commonly associated with Teflon, use PTFE, a fluoropolymer in the broader PFAS family. Modern PTFE cookware is made without PFOA, which was phased out of U.S. production.

The bigger concern is overheating. At very high temperatures, PTFE can break down and release fumes. Scratched or deteriorating coatings are another reason to replace older pans.

Bottom line: Great performance, but don't overheat or use damaged cookware.

7. Hybrid Nonstick — 2/10

Hybrid pans combine stainless steel with a nonstick coating. Some use PTFE, while newer versions may use alternative coatings.

They're durable and convenient, but check the manufacturer's materials rather than assuming “hybrid” means PFAS-free.

Bottom line: Better durability doesn't necessarily mean different chemistry.

6. Aluminum — 4/10

Aluminum heats quickly and efficiently. Uncoated aluminum can react with acidic foods such as tomatoes and citrus, potentially increasing aluminum transfer into food.

Anodized aluminum reduces this reactivity.

Bottom line: Lightweight and affordable, but anodized is preferable to bare aluminum.

5. Ceramic Nonstick — 5/10

Ceramic-coated cookware doesn't use PTFE and can be a good option if avoiding fluoropolymer coatings is important to you.

The downside? The coating generally doesn't last as long as traditional nonstick.

Bottom line: A reasonable non-PTFE option, but expect a shorter lifespan.

4. Copper — 6/10

Copper is outstanding at conducting heat, but unlined copper can react with food. That's why quality copper cookware is typically lined with stainless steel or tin.

Bottom line: Excellent performance, but expensive and more maintenance-intensive.

3. Stainless Steel — 8/10

Stainless steel is durable, versatile and coating-free. It handles high temperatures and can last for decades.

The learning curve is getting food not to stick. Proper preheating and enough cooking fat make a huge difference.

Bottom line: One of the best everyday choices.

2. Carbon Steel — 9/10

Carbon steel is lighter than cast iron but can develop a naturally nonstick surface through seasoning.

It works beautifully for high-heat cooking and can last for decades with proper care.

Bottom line: A fantastic combination of durability, performance and simplicity.

1. Cast Iron — 10/10

Cast iron earns the top spot for its simplicity and longevity. Properly seasoned cast iron develops a naturally slick cooking surface without a manufactured nonstick coating.

It handles high heat exceptionally well and can literally last for generations.

The downside? It's heavy and requires some maintenance.

You don't need to throw away every pan in your kitchen tomorrow.

But as cookware wears out, consider replacing heavily scratched or damaged nonstick pans with stainless steel, carbon steel or cast iron.

The best pan isn't necessarily the one with the slickest surface.

It's the one that lets you cook healthy food confidently for years to come.
